
Cold Brew vs. Iced Coffee: The Acid Test
Cold brew and iced coffee might look similar, but their chemical compositions are profoundly different. Understanding the extraction process explains why one is often kinder to your stomach.
Iced coffee and cold brew are not the same thing. This isn't just about taste preference; it's about fundamental chemistry. The distinction matters if you care about how your coffee feels in your stomach, not just on your palate.
The Hot Shot: Iced Coffee's Aggressive Extraction
Iced coffee begins with hot water. Whether it's a quick shot of espresso poured over ice, or a Japanese-style flash-chilled pour-over, the initial extraction uses high temperatures. Hot water is a highly efficient solvent, aggressively stripping coffee grounds of their soluble compounds. This includes a full spectrum of acids, delicate aromatics, and volatile oils.
Consider a standard iced Americano. A double shot of espresso, pulled at around 9 bars of pressure and 92°C, is immediately introduced to ice. That rapid temperature drop locks in much of the acidic punch and bright notes typical of a hot espresso. For a pour-over, like a Hario V60 Japanese iced coffee, you brew hot (93-96°C) directly onto ice, often with a slightly higher coffee-to-water ratio, say 1:12, and a medium grind. This method preserves much of the coffee's origin characteristics – the citrus of a washed Ethiopian Yirgacheffe, or the stone fruit of a Colombian Geisha. But it also preserves the acidity.
These acids, including quinic, citric, and malic acids, contribute to the bright, lively profile many crave. However, for some, particularly those with sensitive stomachs or acid reflux, this acidic load can cause discomfort. The rapid extraction and cooling don't eliminate these compounds; they merely chill them.
The Cold Steep: Cold Brew's Gentle Hand
Cold brew, by definition, never sees hot water. It's a slow, patient process of steeping coarsely ground coffee in cold or room-temperature water for an extended period. This method fundamentally alters the chemistry of the final beverage.
When coffee grounds steep in cold water, the extraction process is selective. Cold water is a less efficient solvent for many of the acidic compounds and bitter components that hot water readily pulls. Specifically, fewer chlorogenic acids convert to quinic acid, a compound often implicated in stomach upset and a perceived 'sourness' in hot-brewed coffee that has cooled. The result is a coffee with significantly lower acidity, a smoother mouthfeel, and a naturally sweeter, often chocolatey or nutty flavor profile.
To make cold brew concentrate, you're looking at a coarse grind – think sea salt – and a high coffee-to-water ratio, typically 1:5 to 1:8. Steep this for 12 to 24 hours, depending on the bean and desired strength. A common method is using a Toddy Cold Brew System or even just a French press, leaving it on the counter overnight. The extraction is slow, deliberate, and bypasses the harshness that can come with heat.
The Chemistry of Comfort
The core difference boils down to pH and compound concentration. Iced coffee, being hot-extracted, typically has a pH ranging from 4.5 to 5.2. Cold brew, however, often sits in the 6.0 to 6.5 range, making it significantly less acidic. This difference is stark enough to be noticeable, not just in taste, but in how your body processes it.
Beyond the general pH, the specific types of acids matter. Hot water extraction also pulls more oils and fatty acids, which can contribute to the 'heavy' feeling some experience. Cold water leaves many of these behind. This translates directly to stomach comfort. For individuals prone to heartburn or indigestion, the lower acidity and reduced concentration of specific irritants in cold brew often make it a far more agreeable drink.
Brewing for Your Belly
If stomach comfort is your primary concern, the choice is clear: cold brew is almost always the gentler option. Start with a medium-dark roast coffee, known for its lower inherent acidity, like a Brazilian natural process or a Sumatra Mandheling. Grind it coarsely, like coarse sand or sea salt. Use filtered water at room temperature and a 1:8 coffee-to-water ratio for a strong concentrate. Steep it for 16-18 hours, then filter thoroughly through a fine mesh strainer and then a paper filter. Dilute it with water or milk to your desired strength. This process yields a naturally sweet, low-acid coffee that can be enjoyed without the common gastric side effects.
While iced coffee offers a bright, complex cup, cold brew offers a smooth, inherently less acidic experience. Understand the chemistry, and you can make the right choice for your palate and your gut.
